Thai Fried Rice

Ingredients: 

For the Coconut Rice:
1 Tablespoon coconut oil (or canola oil)
1 garlic clove, minced
1 green onion, chopped
1/4 teaspoon dried thyme
1 cup water
1 cup lite coconut milk
1 heaping cup long grain white rice
1/2 teaspoon salt

For the shrimp brine:
2 Tablespoons salt
2 Tablespoons brown sugar
4 cups cold water
1lb peeled & deveined shrimp

For the stir fry:
1 Tablespoon coconut oil, divided
1 Tablespoon minced ginger
2 minced garlic cloves
2 green onions, chopped
1/2 cup frozen edamame
1 cup fresh chopped pineapple
1 egg whisked with 1/2 teaspoon sesame oil
2 Tablespoons soy sauce
1/2 fresh lime
