The dressing was a nice combination of tart/sweet and was great with a drizzling of sambal oelek, although sriracha sauce would serve quite well also. I definitely would recommend this salad to anyone looking for a new noodle salad recipe to try.

1 lb boneless skinless chicken breast (or 1 lb shrimp or tofu)
4 ounces rice noodles
2 cups shredded cabbage
1 cup julienned carrot
1/2 cucumber, peeled and sliced
1 red bell pepper, cut into thin strips
1/4 cup chopped scallions or 1/4 cup green onion
1/4 cup fresh mint
1/4 cup fresh basil
1/4 cup lime juice
1/4 cup rice vinegar
