Thai Slaw

We absolutely love this for lunches. It's simple and delicious, with healthy protein and lots of veggies. The fresh lime lends flavour and minerals.


3 C carrots (preferably assorted colors), julienned
1 C daikon, julienned
1/4 C grapeseed oil
2 T fresh lime juice
4 T white balsamic
3 T xylitol
2 T peanut butter (natural kind)
1/2 teaspoons sea salt plus more for seasoning
1/4 small jalepeno, stemmed, seeded, and diced fine
1/2 cup (packed) fresh cilantro leaves
3/4 teaspoon ground coriander
Freshly ground black pepper
1 cup currants
1 cup diced peanuts

Heat peanuts in 300 F oven to warm and freshen.

Blend lime juice,vinegar, peanut butter, xylitol, 1/2 teaspoon salt, corriander, and jalepeno till smooth. Let marinate for 20-30 minutes. Add cilantro, daikon, currants, and carrots; toss to evenly incorporate.  Top with toasted crushed peanuts. Season to taste with salt and pepper.
