For the slaw
1 shredded sweet red pepper
2 handful of shredded baby spinach
1/3 small red cabbage finely shreddedd
1 large courgette cut into ribbons with a speed peeler
For the slaw dressing
3 parts olive oil
1 part white wine vinegar
Dijon mustard
Salt to season
