Thighs ‘n’ Slaw


The ‘I’mm sooooo stuck Thighs N Slaw’ quick fix – serves 2

2 or 4 chicken things (depending on hunger levels)
1 tbs garlic salt
1 tbs dried oregano
1 tps cracked black pepper

For the slaw
1 shredded sweet red pepper
2 handful of shredded baby spinach
1/3 small red cabbage finely shreddedd
1 large courgette cut into ribbons with a speed peeler

For the slaw dressing
3 parts olive oil
1 part white wine vinegar
Dijon mustard
Salt to season
