Three-Cheese Gougeres


These savory puffs fit in at just about any cocktail party. The addition of three cheeses makes them taste extra special for the holidays.

1/2 cup dry white wine
1 stick unsalted butter, cut into small pieces
1 teaspoon sugar
Coarse salt
1 cup all-purpose flour
4 large eggs, plus 1 large egg yolk, lightly beaten for egg wash
1 cup grated sharp cheddar cheese (2 ounces)
1/2 cup crumbled blue cheese (2 ounces)
3/4 cup grated Gruyere cheese (2 ounces)
