Cake:
2 cups milk
2.5 cups all purpose flour
2 tsp. baking powder
2tsp. baking soda
1 tsp. salt
1 cup cocoa sifted
1 cup unsalted butter
3 cups sugar
4 eggs
2 tsp. vanilla
Mocha Filling:
2 Tbsp. flour
1.25 cups sugar
2 yolks
1.25 cup milk
1 tbsp. instant coffee
1/4 cup butter
Icing:
1/2 cup cocoa
1.25 cups sugar
3 tbsp. flour
2.25 cup milk
1/4 cup butter
1 tsp. vanilla
Cream butter and sugar. Add eggs one at a time, beating well after each addition. Add vanilla to milk. Aternate adding dry vs. wet ingredients, after all incorporated beat one minute till smooth. Bake 325 for 40-50 minutes. Cool before icing.
2. Mocha Filling:
Mix dry ingredients in saucepan and slowly add milk. Stir until thick enough to coat spoon. Remove from heat and add egg yolks. Mix well and return to burner to continue cooking for another 10 minutes.
3. Icing:
Mix dry ingredients over heavy saucepan. Add milk slowly and cook over high flame. When mixture thickens, reduce flame and continue stirring. When mixture reduces to 2/3rds, remove from flame, add butter and mix well. Add vanilla last.
