Toasted Coconut Green Beans

Notes: 

Yummy to eat, easy to make - this recipe makes for a nice sweet, salty taste with a nice spiciness to boot.

Ingredients: 

1 pound green beans
¼ cup shredded coconut
2 tablespoons coconut oil
1 teaspoon mustard seeds
¼ teaspoon chili flakes
¼ teaspoons Kosher Salt


  1.  Blanch the green beans in boiling water for 1 minute. Remove and immediately drench in cold water to cool.
    •  
    • Toast the coconut in the oven at 250 °F. About 5-10 minutes. Watch carefully as coconut can got from toasted to burned very quickly.  
    • In a large skillet or wok over high heat, melt the coconut oil. When hot, toss in green beans, mustard seed and pepper flakes. Cook for 1-2 minutes.  
    • Plate on a large platter and sprinkle beans with the toasted coconut.
