Soup:
4 cups water
4 kaffir lime leaves
1 large onion
4 chicken thighs, diced
4 tablespoons tom yum paste (Valcom is best, and this works out to be half a jar)
2 tablespoons fish sauce
2 tablespoons brown sugar
2 large tomatoes, diced
5 small-medium size portobello mushrooms, diced
400ml tin coconut cream
Optional: Fried prawns
Rice:
1.5 cups rice
1 tablespoon oil
1 tablespoon fresh chopped coriander (or a big squirt of the minced stuff that comes in a tube)
1/2 cup coconut cream (from the 400ml tin)
1/2 teaspoon turmeric
1/2 teaspoon salt
