Tomato and Parmesan soup


This is a wee cracker….great as an Amuse Bouche or a straight up summer lunch. Really easy, but only works with the best of the best of the best tomatoes!!


Serving 4
500 grams of souper fantastic cherry tomatoes on the vine
Red wine vinegar
Castor sugar
1 red onion sliced
1 sprig of Thyme
1 Litre of Chicken Stock
500 grams of grated Parmesan
Salt and pepper
