Tomato Galette


For the Pie Crust

- 2 1/2 cups of all purpose flour (or 2 cups of Pastry flour)

- 1 stick of butter

- 1 cup of whipping cream (if you prefer shortening, use 1 cup of it)

- 3 tsp of apple cider vinegar

- 1 cup of ice water

For the tomato galette filling

- 1 yellow tomato

- 1 heirloom tomato

- 2 plum tomatoes

- 1 sweet potato

- 3 mini sweet peppers (choose different colors)

- 1 tsp of dried oregano

- 1 tsp of dried basil (or fresh, if you have it)

- 1 tsp of whole peppercorns

- 1/2 tsp of sea salt

- 1/2 stick of salted butter for brushing the galette
