Tomato Strawberry Gazpacho

  • 10 ounces fresh strawberries, stemmed and chopped
  • 1 large yellow heirloom tomato, seeded & chopped
  • 1/2 pound red pepper, seeded and chopped
  • 1 cloves garlic
  • 1 ounce balsamic vinegar
  • Salt and black pepper, as needed
  • 2 Tablespoons mint leaves


  1. Put all ingredients, except for the mint, in blender and blend until smooth.
  2. Refrigerate 2-3 hours or overnight.
  3. Make a mint chiffonade to garish soup.

Tips / Substitutes: Different vinegars will produce a slighty different background flavor.  Consider cider or champagne vinegars.

Servings: 4

Preparation Time: 5 minutes of active time plus 2-3 hours of refrigeration.
