5 dried chile anchos (2 1/2 oz)
6 drid chiles pasillas (2 oz)
1 canned chile chipotle (optional for heat)

Nuts, seeds, thickeners
1/4 cup sesame seeds (plus additional for garnish)
1/2 teaspoon coriander seeds
1/2 cup vegetable oil
about 1/3 cup unskinned almonds
1/3 cup raisins
1/2 medium onion, sliced
2 cloves garlic, peeled
1 corn tortilla
2 slices white stale brad (can dry out in oven)
1 large tomato (or 15 oz can of tomatoes)

2 oz Mexican chocolate, roughly chopped
10 black peppercorns (1 tsp ground)
4 cloves (1/8 tsp ground)
1/2 teaspoon aniseed (1/4 tsp ground)
1 inch cinnamon stick (1 tsp ground)

1/4 cup vegetable oil
2 1/2 cups broth
1/4 cup sugar
