triple coconut quinoa porridge


1 1/4 cups (60g) unsweetened, wide-flaked coconut (not shredded)
1 vanilla bean, split or 1 tsp pure vanilla extract
1 cup (180g) raw quinoa, rinsed
1 13.5 oz can unsweetened coconut milk
1/4 cup water
2 tbsp cane sugar, plus more for sprinkling on top
1/4 tsp ground ginger
1/4 tsp coarse kosher salt
1-2 tbsp of melted coconut oil (optional)
