Turkey Stuffed Peppers

20 oz ground turkey
1 sweet potato
1/3 cup quinoa
1/2 sweet onion
1 stalk celery
1 jalapeño
3 large bell peppers
Olive oil
Dijon mustard
Cayenne powder
Cajun seasoning
Garlic salt
Black pepper

Preheat oven to 350 degrees.
Peel and dice sweet potato. Lightly coat with olive oil.
Bake at least 20 min while preparing other ingredients.
Rinse quinoa. Add 1/3 cup quinoa to 1/2 cup water. Bring to boil. Cover pot and turn off heat.
Dice onion, celery and jalapeno.
Add onion, celery, jalapeno, turkey and 1-2 tbsp olive oil to quinoa and mix.
Add Cajun seasoning, cayenne powder, garlic salt, black pepper, 1-2 tbsp Dijon mustard. Mix.
Mix in roasted sweet potato.
Halve bell peppers and remove seeds and core. Lightly oil inside and outside of the peppers.
Fill bell peppers with turkey mix. Leftover mix can be rolled into meatballs.
Bake for 40 min.
Layer cheese on top of turkey to melt.
