Tuscan Vegetable Soup with White Beans and Parmesan

Ingredients: 

1 lb kidney beans (dried cannellini white)
2 tbsp olive oil
1 finely chopped onion
2 tbsp chopped fresh thyme
4 garlic cloves (minced)
1/4 head green cabbage (cut into 1/2 inch pieces)
2 cup fresh tomatoes (chopped)
4 celery (stalks cut into 12 inch pieces)
3 carrot (cut into 1/2 inch pieces)
10 cup vegetable stock (canned vegetable broth)
2 potatoes (cut into 1/2 inch pieces)
1/2 cup fresh basil (chopped)
1/2 head red cabbage (cut into 1/2 inch pieces)
4 zucchini (cut into 12 inch pieces)
toast (6 34 inch thick slices 7 grain bread)
1 cup grated parmesan cheese (3 ounces)
olive oil (additional)
