I filled some with strawberry jam and some with peach--both were very tasty. But I had a hard time not eating all 11 of them! I wasn't so fond of the nutmeg flavor so I think I will try cinnamon in its place next time.
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon fine salt
1 cup plain soy or rice milk
1 teaspoon cider vinegar
2 tablespoons cornstarch
3/4 cup plus 2 tablespoons granulated sugar
1/3 cup vegetable oil
2 teaspoons vanilla extract
1/3 cup raspberry, strawberry, or grape jam or preserves
Powdered sugar, for dusting
