Makes about 12 slices


Dry Ingredients:
2 Cups Whole Wheat Flour
¾ Cup White Sugar
1 teaspoon Baking Powder
½ teaspoon Baking Soda
½ teaspoon Salt
3 Tablespoons Poppy Seeds

Wet Ingredients:
1¼ Cups Non-Dairy Milk (such as soy or almond)
½ Cup Canola Oil (or other light oil)
2 Tablespoon Lemon Zest
⅓ Cup Lemon Juice (from about 2-3 lemons)
1 teaspoon Vanilla Extract

Lemon Icing:
1 Cup Powdered Sugar
2 Tablespoons Lemon Juice
1 Tablespoon Lemon Zest
