Vegan Oven Fried Parmesan Zucchini Crisps


1 large or 2 medium zucchini – cut into ¼ inch discs
Flax Egg: 1 tablespoon of ground flax seed + 3 tablespoons of water – mix together until creamy
1 cup of breadcrumbs – use gluten-free if you wish
½ teaspoon of garlic powder
2 teaspoons of Italian seasoning
1 cup of almond milk (I use Silk brans unsweetened original)
Vegan parmesan cheese (I use Go Veggie)
Olive oil spray
