Vegetable Goulash Recipe

Ingredients: 

3 tablespoons butter
4 cups of onions, chopped
3/4 to 1 cup paprika
8 tsp garlic, minced
2 red bell peppers, seeded/membranes removed, cut into ½ inch chunks
1 green bell pepper, seeded/membranes removed, cut into ½ inch chunks
One package of white mushrooms chopped
1 can of diced tomatoes
2 cans of carrots
1 can of garbanzo beans
5 cups vegetable broth
5 bay leaves
1 teaspoon salt
1 tsp pepper
1 package of sour cream


Melt the butter in a Dutch oven over medium high heat and cook the onions until beginning to brown, about 7-10 minutes. Remove from heat and stir in the paprika. Add garlic, return to the heat, and cook for about 4 minutes. Add the bell peppers and cook for another 7-8 minutes. Add the carrots, tomatoes, garbanzo beans, broth, bay leaves, salt and pepper. Bring to a boil, cover, reduce the heat to medium, and simmer for 40 minutes (see note). Add salt to taste. Serve with a dollop of sour cream, some crusty bread, and a cool cucumber salad.
