Vegetable Jambalaya

Ingredients: 

2 Cups Water
1 (15oz) can diced tomatoes
1 package Zatarains Jambalaya. Mix
1 cup diced onion
1 cup chopped red bell pepper
1/2 cup slicer carrot
1 1/2 cups bite sized broccoli florets
1 1/2 cups bite sized cauliflower florets
1 cup thinly sliced zucchini
1/4 cup sliced green onions


1. Bring water and tomatoes to boil in large saucepan. Add Jambalaya Mix, onion, bell pepper and carrot; mix well. Return to boil. Reduce heat to low; cover and simmer 15 minutes.
2. Stir in broccoli, cauliflower, and zucchini; mix well. Cover and cook 10 minutes longer or until rice and vegetables are tender. Remove from heat. Let stand 5 minutes. Sprinkle with green onions.
