Vegetable Ramen Recipe

2 tbsp. vegetable oil
2 carrots , roughly chopped
1 celery stalk , roughly chopped
1 small yellow onion , roughly diced
2 garlic cloves , smashed
1 zucchini , roughly diced
1/8 cup white wine (or white wine vinegar)
3 ½ cups vegetable stock or chicken stock
1 cup water
1 lime , juiced
1/8 cup soy sauce
6 oz ramen noodles
Sriracha , optional
1 cup corn
1 cup savoy cabbage, shredded
1 cup mushrooms, thinly sliced
handful of cilantro leaves , roughly chopped
4 scallion stalks , chopped
1 lime , cut into wedges
1 avocado , in slices
Sriracha , optional
