Vegetarian or Meaty Chili

Notes: 

We enjoy this with a heaping dallop of coconut kefir or organic sour cream a top. It's great both with and without the meat and full of veggies, either way. A terrific no-fuss, winter comfort meal.
Yield: a big pot

Ingredients: 

2 medium cooking onions, chopped
2 bay leaves
1 teaspoon ground cumin
1 teaspoon ground corriander
2 tablespoons dried oregano
1 tablespoon Himalayan sea salt
2 red bell peppers, chopped
1-2 jalapeno peppers, chopped
3 cloves garlic, minced
3 (28 ounce) cans diced tomatoes
1/4 cup chili powder
1 large can chick peas/ garbanzo beans, rinsed
2 large cans red kidney beans, rinsed
1 (15 oz) can black eyed peas, rinsed
1 (15 oz) can brown beans in tomato sauce
1 teaspoon ground black pepper
1 (15 ounce) can whole kernel corn, drained (omit for paleo)
1 cup diced, fresh mushrooms
optional 2 lbs ground beef, regular or lean (regular ground will give more flavour, and is better for paleo)
1 cup diced carrots
1 cup diced zuchini (added at end)
1/2 cup fresh cilantro, diced (to garnish)
1 cup coconut kefir, unsweetened (to garnish) or organic sour cream
