Wakame Salad with Tofu

Try substituting Wakame with fresh spinach and dried mushrooms with fresh shiitakes.


1 cup brown rice
1 medium carrot, thinly sliced
1/4 cup dried shiitake mushrooms
1/4 cup wakame, soaked in cold water 5 minutes, drained and chopped
1/2 cup red bell pepper, sliced
2 tbsp rice wine vinegar
1 tsp raw honey
2 tbsp low-sodium soy sauce
1 tsp fresh ginger, freshly grated
1 tsp sesame oil
5 oz medium firmness tofu, cut into bite-size cubes
