Warm Chicken and Rice-Noodle Salad

Ingredients: 

1 pound chicken fillets, skin removed
1 cucumber
4 cups chicken broth
1 tablespoon grated ginger
1 teaspoon grated garlic
1 teaspoon soy sauce, plus extra for serving
3 spring onions, chopped, plus extra, thinly sliced for serving
4 1/2 ounces fine rice noodles
1 cup brocolli florets
1 package baby spinach
For the dressing combine:
3 tablespoons sunflower oil
1 tablespoon soy sauce
1 tablespoon sesame oil
2 tablespoons white balsamic vinegar
