Watermelon Gazpacho with Lime

Notes: 

Tailor this recipe to your own preferences. If you prefer it more chunky, switch out the romaine for a large yellow pepper. Add a garnish of finely chopped red onion or a dollop of creamy Greek yogurt and chopped fresh mint.

Ingredients: 

3 lbs watermelon, ice cold
1 cucumber, skinned, seeded
2 celery stalks
1 head romaine lettuce, trimmed and chopped
2 tomatoes, seeded and chopped
1-2 tsp garlic, minced
1-2 tbsp lime juice
2 tbsp white balsamic vinegar
2 tbsp cilantro, chopped
salt, to taste
