White Bean Pesto Soup (serves 4)

Creamy, hearty, with the delicious aroma of basil, this soup will warm you up and comfort your soul. It won’t whisk you away to Italy, but it will get you close.


2 teaspoons extra virgin olive oil
1 small onion, chopped finely
3 cloves garlic, minced
1 large carrot, chopped
4 cups vegetable broth
2 15 oz. can Cannelini Beans, drained and rinsed
2 teaspoons salt
4 cups basil
4 Tablespoons chopped walnuts
1/2 cup Parmesan Reggiano, grated finely
