White Chicken Enchiladas

Ingredients: 

2 1/2 pounds boiled and shredded chicken
1/2 chopped onion, sauteed in 2 T butter
3/4 c chopped green chiles
3/4 c chopped tomato
1 t chopped garlic
1 t cumin
1/2 t black pepper
1/2 t salt
2 c tomatillo sauce
1 pkg flour tortillas
1 1/2 c sour cream mixed with 1/2 c milk
3 c shredded mixed Monteray Jack and Cheddar Cheese


Saute chicken, onion, chiles, tomato and garlic with cumin, peper and salt for 5 minutes.  Layer 1/3 tomatillo sauce, 1/3 of tortillas, 1/3 of chicken mixture, 1/3 sour cream mixture and 1/3 of cheese in a 13"x9" pan.  Repeat - ending with cheese on top.  

Bake at 350 degrees for 45-50 minutes or until top is golden brown.
