Whole-Grain Artisan Free-Form Loaf

Ingredients: 

1 pound 9 ounces (about 5 1/2 cups) whole wheat flour

10 ounces (about 2 cups) unbleached all-purpose flour, more for dusting

1 1/2 tablespoons (2 packets) granulated yeast

1 tablespoon kosher salt

1.4ounces (about 1/4 cup) vital wheat gluten

Cornmeal, as needed

Seeds for sprinkling on bread, optional.
