Whole Wheat Sourdough Challah


1 quart proofed sourdough starter
7 cups whole soft white wheat flour (divided, plus extra for kneading)
1 cup filtered water
5 eggs (divided)
1/4 cup honey
1 tsp unrefined sea salt
1/2 cup unrefined extra virgin olive oil (plus extra to grease the bowls)
poppy seeds (to dress the challah)
