Whole Wheat Zucchini Pancakes


1 1/2 cups whole wheat pastry flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon ground cinnamon
1/4 cup or 2 egg replacer
1 cup almond milk
1 teaspoon pure vanilla extract
2 cups shredded zucchini, wrapped in a kitchen towel, paper towel or cheese cloth and wrung out to remove excess moisture
