Ingredients: 

1 lb large sea scallops, muscles removed, rinsed, and drained
2 Tbsp rice wine or sake
1 tsp minced fresh ginger
2 1/2 Tbsp olive or canola oil, divided
1 lb baby spinach, rinsed and drained
2 roasted red peppers, blotted dry (or use roasted peppers from a jar), diced into 1/4-inch pieces
3 Tbsp sesame seeds, toasted in a nonstick pan until golden brown (optional)

DRESSING:

2 Tbsp low-sodium soy sauce
2 Tbsp clear rice vinegar
1 Tbsp sugar
