Winter Salad

Ingredients: 

Roasted squash, wedges
roasted beet, sliced
pear, sliced
blue cheese or goat cheese, crumbled
pea shoots (or other green shoots)
bean sprouts

Balsamic maple/honey dressing:
1:3 Balsamic vinegar : olive oil
Maple syrup or honey to taste

If using honey, can replace balsamic vinegar with lemon juice.


1. Pour all dressing ingredients into a container. Cover tightly with lid and shake.

2. Place pea shoots on plate

3. Arrange all other vegetables on top

4. Top with crumbled cheese

5. Pour on dressing.
