Wonton Soup Recipe

8 oz. ground pork or chicken
1 green onion minced
2 tsp. soy sauce
1 tsp. cornstarch
1/2 tsp. grated fresh ginger
4 oz. medium shrimp deveined and shelled
48 wonton wrappers
4 cups chicken broth
1/2 cup frozen peas and carrots
Salt and pepper

In a bowl blend pork, chicken, soy sauce, cornstarch, ginger and shrimp with hand blender until a paste forms.

Fill small bowl with water for sealing wonton wrappers. Mist baking sheet with cooking spray. Place 1 wonton wrapper on cooking surface put 1 tsp. filling in wrapper in the center. Keep remaining wrappers covered with plastic wrap. Moisten edges of wrapper with finger. Fold in half diagonally. Pinch edges to seal, press out air, place on cookie sheet, cover with plastic wrap.

Bring broth to boil and 2 cups water. Reduce heat to medium. Drop in peas and carrots. And wontons.

Cook stirring until skins are translucent, filling is firm, and vegetables are cooked 5 to 8 minutes. Season with salt and pepper.
