8 ounces Ziti (or penne) pasta, cooked and drained
1 tablespoon extra-virgin Olive oil
1 medium Onion, chopped
2 large Garlic cloves, crushed
2 tablespoons Butter
3 tablespoons all-purpose Flour
1 1/2 cups fat-free Half-and-Half
1 cup fat-free Milk
1 cup grated Parmesan cheese
2 teaspoons dried Italian seasoning
Salt and pepper, to taste
1 14.5-ounce can diced Tomatoes with Italian herbs
1 10-ounce package frozen chopped Spinach, thawed, drained
