This is probably inch for inch the cheapest and coolest party food you can get your hands on, damn tasty and utterly addictive…I’ve stolen plates of these at parties and hid under the stairs with them. There are a few ways to cook these wings but for my money it’s gotta be deep fried, roasting and grilling is fine but I feel deep frying gets the skin just right. The wings are then basted in a hot sauce that you can either buy and touch up or make yourself, then dunked in the obligatory blue cheese dip.
Enough for a large platter:
2lbs Chicken wings, halved, tips trimmed, washed and dried
Hot Sauce:
1 tbs celery salt
1 tbs garlic powder
1 tbs cayenne pepper
1/2 tbs brown sugar
1 squirt tomato puree
250mils white wine vinegar
1 tbs strong chili powder
Olive oil
Knob of butter
Combine all of the above in a bowl, it will be vinegary and fiery – your eyes should water if you take a snout full of this stuff! Place in a small pan and warm on the heat and drop in the butter.
Blue cheese dip
2 tbs mayo
2 tbs sour cream
2 tbs strong blue cheese
1 tps lemon juice
water
In a small bowl combine mayo, sour cream, blue cheese and lemon juice, if the mix is lumpy just add a little water to loosen.
