Zucchini Minestra Soup –

Ingredients: 

1 leek, white and light green parts only, diced
1 cup chopped onion
1 cup diced celery
2 teaspoons chopped fresh garlic
1/2 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cups vegetable broth
28 ounce can crushed tomatoes with basil
12 ounces diced zucchini
7 ounces Russet potatoes, peeled and diced
2 teaspoons basil paste
