zucchini muffins

Ingredients: 

1 1/2 lb. zucchini
4 eggs separated
1 med. onion grated
salt/pepper
1 cup potato starch
grease for muffin cups


  1. Peel zucchini
  2. grate coarsely into bowl
  3. mix egg yolks
  4. addd beaten egg and onion
  5. season with salt, pepper. mix to bland
  6. in a bowl beat whites until still
  7. gently fold whites and starch into yolk mixture
  8. spoon into cups
  9. bake at 350 for 50 min.
