Chicken, Shrimp, and Sausage Jambalaya

Ingredients: 

4 (1 lb) chicken cut into 2" chunks
2 t Creole seasoning
2 T canola oil
6 oz andouille sausage or other smoked sausage
1 large white onion, chopped (1 1/2 cups)
1 small red bell pepper, cut into 1" strips
1 small yellow bell pepper, cut into 1" strips
1 small green bell pepper
1 T fresh thyme leaves
2 T all-purpose flour
1/4 teaspoon(s) cayenne pepper
1 C raw long-grain rice
3 C chicken broth
1 can (16-oz) diced fire-roasted tomatoes, undrained
3/4 lb large shrimp, peeled and deveined
Chopped parsley for garnish
