I do a combo of Ina Garten and Tyler Florence's bourguignon. I do everything in this recipe but the last part. I stir the flour with some melted butter,in a separate bowl, and add to the pot right after the carrots and onions, with the tomato paste. I skip the pearl onions, and then cook mushrooms and add to the pot with 30 minutes left on the clock. COOK 3 hours...1.25 is not enough.
