Use 2 cans of crushed tomatoes for sauce

Ingredients: 

2 large zucchini, cut lengthwise into 12 ¼-inch-thick slices
1 tsp. salt
2 cups low-sodium vegetable broth
1 cup quinoa, rinsed and drained
½ cup tomato sauce
¼ cup finely chopped onion
1 tsp. dried oregano
¼ cup fresh basil leaves, chopped
¼ cup fresh parsley leaves, chopped
1 cup ricotta
1 25-oz. jar marinara sauce
2 cups fresh Mozzarella
