Ingredients: 

6 slices (~5 oz) thick-cut bacon, diced
1 cup (6 oz) all purpose flour
1 cup (5 oz) cake flour (or 3/4 cup all-purpose flour + 2 Tablespoons cornstarch)
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons granulated sugar
3/4 teaspoon salt
8 tablespoons (1 stick, 4 oz) frozen unsalted butter
1 cup (4 oz) shredded sharp cheddar cheese
1/4 cup minced chives
1 cup (8 oz) buttermilk
