Ingredients: 

1 cup red lentils, soaked in hot water for 15-20 mins
1 Tbsp fresh grated ginger
2-3 spring onions, sliced thin
1 bunch kale, washed and torn into bite sized pieces
1 can unsweetended coconut milk
1 large shallot, sliced thin
grapeseed oil
