Strawberry Champagne Cupcakes

Ingredients: 

Cupcake Ingredients
1 box white cake mix
1 1/4 cups rose champagne
1/3 cup vegetable oil
3 egg whites

Cupcake Frosting Ingredients
3-4 tbsp champagne
3 sticks butter
4 1/2 to 5 c. powdered sugar
1/4 - 1/2 c. white cake mix (dry)
A few drops of pink food coloring*

Garnish Ingredients
Sliced strawberries
white sugar crystals
edible pearls (optional) If you want these for photos by all means but I wouldn’t serve them to your guests with them because they are crunchy.

*I take out a small portion of the frosting and add a few drops of coloring and then slowly add portions of that to the main bowl until I get the desired color. If I don’t do that often times the color gets more intense than I wanted.
