Almond + Cornmeal Herb Crusted Eggplant

Ingredients: 

1 eggplant
2/3 cup raw almonds
1/3 cup cornmeal
1/3 cup oat flour
2 eggs or 1/2 cup unsweetened almond milk—vegan
1/4 + 1/8 tsp garlic powder
1.5 tsp oregano
1 tsp basil
1/4 tsp salt
1/4 tsp black pepper
extra salt for the eggplant slices
