Alphabets Soup

Notes:

Ingredients: 

- Small alphabets cookie cutter
- Slices in approx. 1cm thickness

Carrots - 1x (sliced)
White Turnip - 1x (sliced)
Winter melon - 1/2x (sliced)
Green peas - 1/2 cup
Tomatoes - 2x (wedges)
Onions - 1/2 cup (sliced)
Sesame oil - 2 tbsp
Garlic salt - to taste
Tomato sauce - 4 tbsp
Chilli sauce - 2 tbsp
Black pepper - to taste
Coriander - 4 springs
Water - 3 cups

= TOMATO SAUCE =
20 Roma tomatoes, halved and seeded
1/4 cup olive oil
1/2 teaspoon kosher salt
1 teaspoon pepper
1 cup finely diced onion
2 teaspoons minced garlic
1 tablespoon finely chopped oregano leaves
1 tablespoon finely chopped thyme leaves
1 cup white wine


= TOMATO SAUCE =

  1. Preheat oven to 325 degrees F.
  2. In 2 (13 by 9-inch) pans place tomato halves cut side up.
  3. Sprinkle with oil, salt and pepper, onion, garlic, and herbs. Bake tomatoes for 2 hours.
  4. Check the tomatoes after 1 hour and turn down the heat if they seem to be cooking too quickly.
  5. Then turn the oven to 400 degrees and bake another 30 minutes.
  6. Remove from the oven and process tomatoes through a food mill on medium dye setting over a small saucepan.
  7. Discard skins. Add white wine, bring to a boil, reduce heat to low and cook for 5 minutes

= SOUP =

  • Chop carrots + turnips + winter melon slices into alphabets using alphabets cookie cutter
  • Simmer water + tomato wedges
  • Add in onions + salt
  • Add alphabets + green peas + sauces
  • Add sesame oil + pepper
  • Add 2x coriander
  • Bring to boil. Off the heat immediately after boiled
  • serve with coriander
