1 zucchini
1 yellow squash
1/2 yellow onion
20 cherry tomatoes- halved
1 cup mushrooms
1 can of organic diced tomatoes
Pepper and salt to taste
Italian seasoning
1 cup mozzarella
1/2 cup Parmesan
1 tbsp olive oil
Heat up olive oil in large skillet
Add diced onions until browned
Add sliced zucchini and squash and halved mushrooms
Sauté on medium heat until browned. Add all spices and then cover and allow to continue cooking
While vegetables are cooking, cook noodles in boiling water until done. Set aside
When noodles are done, add tomatoes and can of dice tomatoes to the vegetables. Stir all together and allow to simmer for 5 minutes with a lid.
Preheat oven to 450 degrees
Grease a Pyrex dish and add a thin layer of noodles. Cover noodles with vegetable mixture and then a thin layer of mozzarella and then continue this pattern as many times as desired. The final topping should be mozzarella. Add a thin layer of Parmesan on top before baking.
Slide dish into oven and allow to cook for 25 minutes. Cheese should be browned on top.
Allow to cool for 10 minutes before eating.
Serve with garlic bread or a salad.
