Bolognese

Ingredients: 

olive oil
500gr minced meat
350gr mushrooms, chopped
1 carrot, finely diced
1 onion, finely diced
2 celery sticks, finely chopped
2 garlic cloves, finely chopped
2 oregano sprigs
100gr tomato paste
500ml stock
1 can diced tomatoes
100ml pouring cream (optional)
2 tsp red wine vinegar
cooked spaghetti or other pasta
finely grated parmesan to serve


Directions

  • heat olive oil in large saucepan over medium-high heat, add minced meat and season to taste, increase heat to high and cook until liquid evaporates and meat browns.

  • add carrot, onion, celery, mushroom, garlic and herbs and cook until vegetables are tender (10-15 min)

  • add tomato paste, canned tomatoes & stock, reduce to low heat and simmer until very tender and liquid is reduced to a sauce (1 hour or so)

  • remove from heat, add vinegar and cream, season to taste and toss through pasta.

  • serve immediately wit plenty of finely grated parmesan
