Ingredients: 

3 c cubed butternut squash
1 T olive oil
sea salt and freshly ground black pepper

1 3/4 c vegetable broth
1/2 water
1 T olive oil
1 small onion, chopped
1 clove garlic, minced
1/2 c Arborio rice
1/4 white wine

1 t dried thyme
1/4 c Parmesan cheese
