Notes: 

Classic Nian Gao is usually a steamed cake with two main ingredients: red azuki beans (sweet red beans) and glutinous flour (stick flour). This recipe shows how to prepare and bake Nian Gao giving a more cake-like texture.
As legend has it people believe a Kitchen God visits the Chinese homes one week prior to the Chinese New Year (also known as the Spring Festival). Nian Gao is offered as a means to appease the Kitchen God.
Yield: serves 4 to 6

Ingredients: 

4 1/2 cups glutinous rice flour (sticky flour, available at international or Asian food markets)
3/4 cup vegetable oil
3 large eggs
2 1/2 cups milk
3/4 cup sugar
3/4 cup brown sugar
1 tablespoon baking soda
16-ounce canned red azuki or adzuki beans, mashed (available at international or Asian food markets)
Equipment: medium mixing bowl with wooden spoon or electric mixer, greased baking pan, rubber spatula or spoon, oven mitts, toothpick
