Calamondin (or Lemon) Pie with Oatmeal Cookie Crust

Ingredients: 

1/2 cup quick oats (use gluten-free oats, if necessary)
1/2 cup sorghum flour (may use whole wheat flour or a mixture of unbleached and whole wheat)
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon vanilla
1/4 cup brown sugar (packed)
2 tablespoons natural sugar
1/4 cup apple sauce
1 cup sugar
1/2 cup cornstarch
1/4 teaspoon agar agar powder (or 1 more tablespoon cornstarch)
1/4 teaspoon salt
1 1/4 cup soymilk (or other non-dairy milk)
1 cup water
3/4 cup calamondin juice
1 1/2 tablespoons chopped calamondin rind
